A good friend said very gently this morning, "Sometimes you just don't have it in you." I think this is especially true for my littlest man. Today, he just didn't have it in him. So, as the nutty mother that I am I took him home, fed him grilled cheese, and we took naps.
He slept for 4 hours.
Tonight, he's better and totally confused as to where the day went. Who isn't?
In honor of just not having it in you, I'm making a rhubarb tart. Who knew that he loved rhubarb? Apparently, so much so that he often steals his grandmother's desserts when they have rhubarb in them. Hey look - it's a golden eagle, then he'll point off to the where ever.
You will need:
1 lb. rhubarb
2 cups water
1 cup sugar
juice of 1 orange and 3 strips zest
Boil sugar, cloves, and orange zest. Let simmer. Add rhubarb - let cook until soft.
Here's the thing, you could serve that alone with whipped cream or vanilla ice cream. Granted, if I get lazy in the next hour or so, that's exactly what I'm going to do.
If I don't get totally lazy, I'll make a puff pastry and pull this together as a tart. Then, I'll serve that with either whipped cream or vanilla ice cream.
Rhubarb to make the day complete, to replenish what you didn't have in you to begin the day with, to make the world right. At least that's how it goes in our little house.
