The 4th of July feels like summer no matter what the weather. In my world, the weather usually includes fog. Last night, it just involved ribs, beer, and some watermelon lemonade. It took me some time to decide whether or not I really wanted to make this drink. I read this recipe several time before deciding to make it. Then, I decided to try it with Prosecco. After that I tried it with white wine- just a random one. I think in the future I'll use a sauvignon blanc, a citrusy one at that.
I like it best with the white wine.
1 cup fresh-squeezed lemon juice
2 cups fresh watermelon puree, strained through a coarse strainer to remove seeds
12 tablespoons simple syrup
3 cups cold water, Prosecco, or white wine.
Be sure to strain the watermelon puree.
Serve very chilled.
Add mint and strawberries to the pitcher of this.
It's very light and refreshing.
Cheers to summer,
