The quote sums up my experiences with summer dating. Know what I'm sayin'? Frustration abounds.
That said, I found this new recipe. Love it. Super, duper easy.
You will need:
Chicken thighs, between 4 and 6
Salt & Pepper
Fresh parsley, rough chop
Pre-heat the oven to 350 or 400 degrees. On the stove, brown the chicken. Remove from pan. Toss in heated pan bell peppers until they're just a bit crisp. Toss in the garlic and let it brown just a bit. Pour in white wine, just a splash. This is the part where you pull up all the good bits stuck to the bottom of the pan. Toss in the can of tomatoes. You might want to salt this dish at this point - just a big pinch of it.
Then, put the chicken back into the middle of all that stuff. Put in the oven and forget it for 35-40 minutes. When it's almost done, toss in some capers and the parsley.
Truth be told, it's so freakin' easy and yummy!
