No matter how much the lame neighbors might behave, I refuse to alter my life in any way. They're loud, obnoxious, and completely self-centered. It's a shame because the one making all the trouble is either a boyfriend or the brother of one of the girls who signed the lease. How sad for her. She won't stick up for herself or her apartment. I'm not going to take shit because she doesn't' want to handle hers.
I won't back down on her behalf... men bullying women is something that I don't ever back down from, regardless of how awful it might be for me. It might just be my achilles heel. Either way, loud, lame college students must learn that this is the real world, with real people, living real lives; not the lives that you think you will live, rather the ones that happen when you're making other plans.
You know that crazy shit called reality?
Tonight I made a nice steak salad. The kid-let ate the steak off the bone, refused the cooked mushrooms, nibbled the arugula (the rocket), and the cherry tomatoes. I love that kid.
Steak with Arugula and Balsamic Mushrooms, from Real Simple
You will need:
-
2 tablespoon olive oil
-
1 lb. flank steak
-
salt & pepper
-
1 pound crimini mushrooms, quartered
-
1 tablespoon balsamic vinegar
-
1/4 cup heavy cream
-
2 bunches arugula, thick stem removed
-
2 scallions, thinly sliced
Season the steak with 1/2 teaspoon salt and pepper, each. Heat a skillet over medium-high heat, cook to desired doneness, 3-5 minutes for medium-rare. Let rest 5 minutes before serving.
Heat tablespoon of olive oil over medium high heat. Add the mushrooms and season with salt & pepper. Cook until tender and browned. Stir in the balsamic vinegar. Remove from heat and add the cream.
Divide the arugula, mushrooms, and steak among the plates and sprinkle with scallions.
My only tips on this is that it might require more salt than it calls for. The flavor isn't right unless the salt is increased a bit. Go figure.
Cheers,
Michelle
