I'm working on eating the 5 a day - both veggies & fruits - and this salad really provides the assist on that goal.
It's simple and to the point:
Toss some fresh spinach with steamed asparagus, crumbled goat cheese, salt & pepper, and a few chervil springs.
The dressing is olive oil, juice of one lemon, and a bit of minced shallot.
Go wild with it.
