I realized this morning that my life is going great and I stand around waiting for it to go not so great. As though any moment life could take that horrible swing to the other side and remain terrible forever. It's good and soft and wonderful right now. I decided to stop standing around and to sit savoring it.
The other great news includes this delightful new wine shop that suits me just splendidly. The owner knew my wine right away and then recommended several that I like so very much. They don't sell cheese, which is a total blessing to my wallet. Know what I'm sayin'?
Tonight we're eating warm Corn Salad.
You will need:
2-3 ears of corn, white or yellow or both with all the kernels cut off
1 orange bell pepper, diced
1 handful chopped parsley or cilantro, depends on what you like more
1 packet of cherry tomatoes, halved
White wine, just a half splash
salt & pepper
1 clove garlic, minced
Red onion, diced
Cut the kernels off the ears of corn and set aside. Diced 1/2 bell pepper. Diced red onion. Mince garlic. Halve the tomatoes. Rough chop the green (parsley or cilantro). Get out the wine.
Pour a glug of olive oil in the pan. Toss in the onion. Cook until just before it's soft. Pour in a bit of wine - like a half splash. Let reduce. Toss in the bell pepper and cook until it's just soft. Next will come the corn and the garlic. Add a pat of butter. Then the tomatoes. Let this come together a bit and then toss the greens over the top.
Yummy - I'm serving this with a grilled chicken, arugula salad with citrus, and a nice rose.
