After a 3 year hiatus that began in May 2006, I began to run again on this date 12-1-08. No significance whatsoever, save the fact that the holidays were sneaking by and through pounds at me as quickly as they could. I dropped 10 pounds and then added some in muscle. Then, I stopped running for a while. I couldn't quite fit it into my schedule at work and made lousy excuses that sound lame when I say them or write them down, so I won't. Lame. Lazy. No excuse for either.
I realized, after a moment or two, of surfing the Internet that I could spend that time running. I could squeeze in 30 minutes between meetings. Then, to my own astonishment, I did it. I got up off my chair and went to run on the treadmill, only to find that Rachael Ray does her show at that time.
Great. I'm running with Rachael Ray.
In the spirit of EVOO and 30 minutes meals, I give you a modified (only because I have left over steak) this:
Chicken or Beef
Tomatoes, cherry or grape
Put on a pot of water for the pasta. Brown the chicken with salt & pepper, then add diced red onion and minced garlic. Cook until soft. Add the tomatoes, whole. Cover and let simmer until the tomatoes burst. Add a bit of the pasta water, not much, just a 1/2 cup. Add this point, you'll need to re-season with salt & pepper.
Drain the pasta and put back into the pasta pot. Add the "sauce" to the pasta, then toss in the arugula, rough chopped basil, and the 3/4 cup grated cheese. Mix together and serve with bread.
