I'm moving. Granted, I'm not moving far. Just one apartment over from where I am now, but this new apartment has a dining room, views of trees, and solid wood doors for privacy. I know that the little man is young for privacy; I'm not. My privacy needs grow as he grows older.
Know what I'm sayin'?
I'm celebrating with more fish...seriously? Yup, the kid-let runs the show and keeps my waist line where it is.
You will need:
4-6 fresh sardines
2 tablespoons olive oil
1 pound pasta, either penne, bucatine, spaghetti
2 tablespoons extra-virgin olive oil
A few fennel seeds, lightly crushed
A pinch of chili flakes
1 1/2 roasted tomato sauce
Flat leaf parsley - rough chopped
I recommend getting the sardines pre-cleaned. Ask the fish monger.
Salt these sardines and roll in olive oil. Place on a small baking sheet and roast under the broiler until firm and cooked through. Roughly 2 minutes.
Ease all the sardines fillets off the bones.
At this point, drop the pasta into the water to cook.
While that's going on, warm the EVOO in a skillet. Add the fennel seeds and chili flakes. Add the sardine fillets and swirl the pan as you warm them. Add the tomato sauce and parsley.
Fold in the pasta when al dente.
Serve with broccoli, a nice fresh salad, french bread.
