Just before I turned 15, during a regular family vacation my father ended up a paraplegic. Stay with me, this relates to drumettes...I promise. During the aftermath, which is to say the immediate years following this devastating injury to my family, I learned to cook out of necessity. My mother worked full time, tried damn hard to keep her marriage and sanity, and I tried to stay out of the way and not get caught smoking lots of pot.
We all found our roles a bit limiting. Anyhoo...
Chicken Drumettes became a staple food item in my house during that time period, more or less because they took no prep time and even less time to cook. My sister would eat them, my mother didn't notice how high I was while I prepared them, and the world kept turning.
Chicken Drumettes with Roasted Potatoes & Carrots, Broccoli
1. Pre-heat the oven to 350 degrees.
2. Salt & Pepper the drumettes to your liking. Drizzle olive oil over the top.
3. Bake for 25 minutes or until done.
See! Even a stoned teenage girl could do that.
I think tonight I will marinate them a bit in lemon, garlic, and champagne vinegar with cilantro for flavor. The potatoes and carrots take roughly 20 -30 minutes in the oven along side the chicken.
When life gets very stressful, remember the drumette. It's you friend.
