In my life, I enjoy many, many things. I enjoy food, wine, and their ilk. I enjoy books, travel, and finding new adventures. I relish challenging myself and my comfort zone. Although the zone occasionally needs a break from being challenged. I think I'm in that space right now. Before January when lots of my life will change.
My latest adventure involves sledding down a big hill with small children. You know how it goes...that's just the wild and crazy that I've got going on.
I do find that I enjoy home cooking for larger groups of people somewhat relaxing. I know, huh? Blows my own socks off too.
Here's what I'm cooking up tonight:
Carnitas, with Black Beans and Spanish Rice
Carnitas is one of the easiest things to do and do well. You will need:
1. Salt the pork. Then rub it down with a bit of chili powder. Place the pork into a crock pot.
2. Add slices of fresh oranges, cilantro (roughly chopped), chipotle chilies, and garlic.
3. Add a 1 1/2 cups of water and 1 1/2 cups of orange juice to the pot.
4. Leave it on medium heat for 3 or 4 hours depending on when you want to eat.
Serve with black beans, Spanish rice, and salad.
