I don't know about anyone else's feelings, mine, words do not capture my feelings. Words couldn't do this justice. Words fall short. Except for that man's speech, that one - that man who just became the president, his words did not fail him. No his words moved me.
I'm not some stupid school girl with a big OBAMA crush. I love me some Hillary. I never did care for John Edwards. OBAMA wasn't my man. He never felt mine and I argued with friends over this. One in particular, get it? get it? I'm hearing him say to me now. Do you get it now? I get it. I admit it. I get it and I am awestruck.
I will pop champagne and eat nibbles for the next few weeks in celebration. What else should we as a country do?
Another friend sent me this recipe:
The combination of lemon zest, tangy olives, and refreshing mint gives this crostini a Mediterranean twist.
Then, while hot, rub bread with garlic, if you like. Slather 1 tbsp. of the ricotta on top of each toasted slice.
Spread olives, lemon zest, and torn mint atop ricotta.
Eat. I'm thinking this sounds incredibly easy. As soon as I'm back in town, I'm going to make a whole batch of these and pop the cork. Who wants to join me in the celebration of the most unlikely president?
Eat, be well, and celebrate.
